and wasting all my time

Apparently my little family loves carbohydrates. The top of my fridge is littered with them. There’s a dozen bagels, a half-loaf of homemade whole wheat bread, half a loaf of sliced wheat bread, zucchini bread from Jesse’s mom, gingerbread cookies…and there’s a little
chocolate chocolate-chip cherry cake with 12 matching cupcakes in the oven.

We also ate barbeque chicken pizza twice last week. Homemade, of course. We have some ridiculously good recipes, Jesse and I. So….here’s one of them.

Barbequed Chicken Pizza
(as far as I can follow, most of it is Jesse and I just watch)

Dough:

1 3/4 cup warm water
1 TB sugar
1 TB yeast
Let this sit for 10 minutes, then add
1/2 cup cooking oil
1 ts salt
1 cup flour
Whisk together, then add
2 cups flour
and knead briefly. Set aside to rise till doubled (45-60 minutes)

Topping:
Saute in sesame oil:
2 chicken breasts, cubed
a little garlic salt
paprika
salt
pepper
Use a little lemon juice if the chicken gets a little dry.
Whip together
1 1/2 barbeque sauce
1 TB molasses
1 TB honey
1/3 cup brown sugar
Simmer in with the chicken. Roll out dough and spread chicken barbeque mixture over it. Sprinkle with
1/2 red onion, chopped
and potentially
bacon and pineapple
Bake for 15-20 minutes at 425.
Good stuff. It’s even better cold later. :-)
